Method

Take the Boston Butt Pork Roast and remove the pieces of fat that are loosened at the sides. Let the remaining fat stay on the pork.

Use a meat injection to inject the marination deep into different parts of the pork piece. Do not add more marination when it starts oozing out after a specific amount. You can use the same marination on top of the pork piece as well. This marination is made by combining salt, onion, garlic, rosemary, oregano, parsley, and pepper ground finely altogether with water, vinegar, and olive oil. Make sure that this mixture is smooth and does not get stuck in the meat injection.

After you are satisfied with the coat of spices rubbed all around the meat, wrap it with a plastic wrap and keep aside to rest overnight, ideally.

Now in order to prepare the grill to start the barbecue, first and foremost, make sure it is clean, and no previous pieces of ashes remain in it.

On the 2-burner gas grill, Place an aluminum tray filled with water on the rack placed above the grill. This will help keep moisture in the meat and prevent it from drying out.

Remove the lid from one side of the burner and add the wood chips in a bowl-shaped aluminum wrap. Light up these wood chips and wait until the smoke starts to appear. Make sure the wood chips are already soaked and keep adding more of these after consecutive periods to keep the fire burning.

Once sufficient smoke appears, place the pork piece onto the grill on the side that is away from the burning wood, that is, the cooler side of the grill. The fat layer of the pork should be upwards. Now cover it with the lid. Maintain the temperature at about 225 degrees Fahrenheit using a meat thermometer.

After a couple of hours, flip the pork piece to change position in order to ensure even cooking of the meat throughout. Let the pork sit for a few more hours until it reaches the ideal temperature of 195 degrees Fahrenheit. Once you attain the specified temperature, take out the pork piece and let it rest for another hour and a half.

There is a possibility that the cooking time exceeds the standard 5-6 hours, but the temperature does not touch 195 degrees Fahrenheit. In this case, the meat should be placed in the oven and heated for another hour or two until you attain the desired temperature.

Once cooked and rested, pull the pork with two forks to shred it well. At this stage, you can add the barbecue sauce for that extra punch of flavor. To make The barbecue Sauce combine mustard, white sugar, brown sugar, chili powder, black pepper, white pepper, and cayenne into water and apple cider vinegar and cook for about 20 mins. Add the soy sauce, butter, and liquid smoke afterward and simmer for another 10 mins.
